Some people may think tequila tastes like college nights and regret, but in reality, the agave spirit category is nuanced and well worth exploring.

Fruity, sweet, earthy, smoky — tequila spans a range of tastes that can include notes of citrus, honey, black pepper, vanilla, caramel, and oak. It can be bright and fresh, or smooth and aged. Tequila pairs with way more than salt and lime — and here’s a chance to try a top-shelf line-up matched with authentic Mexican cuisine.

Seaport restaurant Rosa Mexicano welcomes Maestro Dobel to town on Thursday, March 3, for a five-course tequila pairing dinner hosted by the spirit-maker’s local on-premise manager, Michael Ray. Hailing from Jalisco, Mexico, Maestro Dobel has an innovative portfolio of 100% agave tequilas, all aged six months or more.

Executive chef Manuel Trevino will match a hamachi aguachile with Maestro Dobel’s smoked silver tequila “Humito,” and he is preparing chorizo, black bean, and cilantro empanadas to pair with an oak-aged golden Reposada. Other courses include garlicky shrimp, pan-roasted duck breast mole manchamanteles (“tablecloth stainer” stew), and churros with chocolate and berry sauces for dipping.
